Hello, hello, hello! I haven't had a chance to write in a while, which is some serious no bueno. Muy grande no bueno, if you will. Yes, I know I am a super white girl and that my previous statement butchered the Spanish language on a whole new level, but that's alright because it got my point across, right? Right. Writing is very therapeutic for me. I've always been a big fan of journals. When I'm stressed or excited or anything in between, just putting my thoughts on paper helps to clear my head. Looking back on old entries and reminiscing on the way things used to be is a nice benefit too, except those awkward junior high years... We don't want to experience those ever again. In any way, shape, or form.
My first round of tests is complete, midterms included, so now I have a little time to relax. Unfortunately, the timing of those tests perfecting coincided with an extremely inconvenient cold. Colds always suck. They are especially sucky for me because I have the lungs of an eighty year old, chainsmoking grandpa. AKA asthma, really bad asthma. Whenever I get sick with anything, respiratory or not, coughing and wheezing ensue and persist for several weeks. Hurray... And worst of all, last weekend I had to go home. That wasn't the bad part; that was actually quite enjoyable. The awful part was that I had to leave Penelope with my parents because she had to get spayed! Saying good bye to my baby for a week was sooo difficult. I miss her! Monday can't come soon enough so I can pick her up. Being lonely makes me crave comfort. You know what screams comfort to me?
Homemade cookies. Maybe of the oatmeal variety. With an addition of cinnamon for some extra coziness. And some chocolate chips. And the M&Ms for a splash of color totally take these over the top.

Oatmeal M&M Cookies (Adapted from here!)
What you need:
1/2 c. room temperature unsalted butter
3/4 c. dark brown sugar
1/2 c. sugar
1 egg
1 egg
2 t. vanilla
1/2 t. baking soda
1/2 t. cinnamon (plus an extra sprinkle or too, if you like cinnamon like I do)
1 and 2/3 c. old-fashioned rolled oats
1/2 c. AP flour
1/2 c. whole-wheat flour
~1/2 c. semi-sweet chocolate chips
~1/2 c. M&Ms (plus more to add to the tops, if you yould like, and trust me, you would)
What you do:
In a large bowl, cream together softened butter and the sugars.
Add the egg and vanilla and mix well.
Slowly stir in the dry ingredients until just combined.
Fold in M&Ms and chocolate chips.
Let chill in the fridge for at least an hour! This is important!
When ready to bake, preheat oven to 300.
Roll and drop tablespoons of dough onto cookie sheet.
I added a few more M&Ms to the top of each cookie at this point.
Bake for 10 minutes.
Allow to cool for a few minutes on the sheet before moving.
